So I figured… why not make an oatmeal version?! So what are you waiting for? Soft, chewy, and loaded with rolled oats and chocolate, this is a great recipe the whole family will love! Super easy and no mixer required! Double recipe for large batch in 9x13 pan.For nicely cut bars, place bars in fridge to firm up, then slice into bars.If you're one of those peeps that can't wait until these oatmeal bars to cool off, you'll want to dig in right away with a spoon for melty chocolate and butterscotch in your bars! Otherwise, wait until they cool completely to slice into bars.They will continue baking after you take them out of oven. For ooey gooey oatmeal bars, just don't overbake for the chewiness of the oats and the slightly gooey center.Enjoy them cold, at room temperature or warmed if you prefer. Store them in an airtight container in the refrigerator for up to 5 days.Storing Butterscotch Chocolate Oatmeal Bars! Remove from the oven and let cool 10 minutes before cutting.If it jiggles in the middle, put the pan back in and try again every 5 minutes until there is no longer any jiggle and it’s better to not overbake.
